Saag Paneer (Spinach with indian cheese):

This delicious spinach and cheese dish originates from Northern India, the home of Paneer, a fresh cows milk cheese similar to ricotta. Paneer can be found near the Feta and Haloumi in most stores, either can replace paneer although the results won’t be as good. Enjoy!

  • 2 bunches of spinach
  • 2-3 tablespoons of cooking oil
  • 1/2 pound of paneer cubes
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of grated ginger
  • 2 teaspoons of garam masala
  • 3 teaspoons of chopped tomatoes
  • 1/2 teaspoon of ground tuermic
  • 1/2 teaspoon of coriander powder
  • 1/2 a cup of single cream
  • salt to taste

Take a large to medium saucepan. Add some water and add spinach in a saucepan. Leave to boil for three minutes and then drain the spinach well.

Add the spinach into the food processor, puree until fincely chopped.

Heat cooking oil in a saucepan,over medium heat. Add the paneercubes and stir until browned in color on the sides. Take the paneer cubes out of the sauce pan.

In the same saucepan, add the cumin seeds and leave until lightly toasted. Add freshly grated ginger, chopped tomotoes, garam masala, ground tumeric and coriander powder. Continue stirring until the tomotoes break down leaving the sides.(around 5-8 minutes). Then add spinach and paneer cubes, salt to taste followed by the single cream. Cover the saucepan and cook for 10 minutes.
